How To Make Lunchbox Pizza Quesadilla
INGREDIENTS
- 1⁄4 cup shredded cheese
- 2 -8 inches flour tortillas
- 3 tablespoons spaghetti sauce or 3 tablespoons pizza sauce
- 8 slices pepperoni
DIRECTIONS
Step 1
These are prepared just like any other quesadilla or grilled cheese sandwich.
Step 2
Begin by spraying the bottom of a non-stick skillet with cooking spray and preheating it.
Step 3
Once the pan is fairly hot, place one Flour Tortilla in the pan.
Step 4
Quickly spread a few tablespoons of sauce on the tortilla before the bottom starts to brown.
Step 5
Next, add a layer of Pepperoni (or any other toppings you prefer).
Step 6
Top the toppings with shredded cheese.
Step 7
Complete the “pizza” by adding the second Flour Tortilla on top.
Step 8
Let it brown, just like any other quesadilla or grilled cheese, and then flip it over. If the cooking spray was absorbed, you may add a little more, though it’s usually not necessary.
Step 9
After both sides are browned, and the insides are hot and melted, take the “pizzas” out of the pan to cool.
Step 10
Once cooled, slice them into quarters like a pizza and wrap each piece snugly with plastic wrap or aluminum foil.

Step 12
For a convenient lunch option, make these in batches, freeze them, and then take one out in the morning to pack in the lunchbox. By lunchtime, it will usually be thawed and delicious. If you’re freezing them, make sure they cool completely first, then wrap each one separately in plastic wrap and aluminum foil to prevent ice crystals from forming.
